Morton Coutts discusses his family background, the family's tradition of brewing, becoming a brewer (member of the Brewers' Institute, London, 1937), the establishment of the Waitemata Brewery, working with yeast, wort stabilising, and the development of the continuous fermentation process, its origins, experimenting, and patenting the process. He describes the legal problems in the United States and Canada over the patent. Discusses brewing processes including strains of yeast and of barley, quality of New Zealand barley.
