Description: Morton Coutts discusses his family background, the family's tradition of brewing, becoming a brewer (member of the Brewers' Institute, London, 1937), the establishment of the Waitemata Brewery, working with yeast, wort stabilising, and the development of the continuous fermentation process, its origins, experimenting, and patenting the process. He describes the legal problems in the United States and Canada over the patent. Discusses brewing processes including strains of yeast and of barley, quality of New Zealand barley. Describes developing mussel socking by experimenting with daughter's toy knitting machine, and the commencement of manufacturing and marketing mussock to industry in 1978. Description: Collection comprises twenty-six trademark and patent registers from the period 1895 to 1983. Many of the registers feature mounted examples of trademark designs and lettering. Registers appear to have originally been created at the Wellington, Auckland, and Christchurch offices of Baldwins, and by the firm Higgs and O'Donnell of Wellington prior to being taken over by Baldwins in 1964. Some registers are dedicated to Australian patent and design registrations. Title supplied by Library. Some of the registers were created by the firm Higgs & O'Donnell of Wellington which was taken over by Baldwin Son & Carey in 1964.
